It’s brewing time!
The amount of time that the water is in contact with the coffee grounds is another important flavor factor.
Coffee can be brewed in several different ways, but these methods fall into four main groups: decoction, infusion, gravitational feed, or pressurized percolation.
It's depending on how the water is introduced to the coffee grounds. Decoction is a process through boiling, infusion is through steeping, gravitational feed which is used with percolators and in drip brewing, and pressurized percolation as with espresso.
Experiment with the contact time until you get the right balance for your taste.
